Our journey began October 2005 when we met in our Single's class at Prestonwood Baptist Church. We were engaged in June 2006 and were married on November 17, 2006. JP works for ROMCO as a Product Support Sales Manager and I will begin teaching part-time for the Dallas International School in August 2011. We have one little boy, Merit Cross. God has truly blessed our family.

Delicious Blueberry Muffins

I made these yummy muffins for Bible study today. They turned out great! Enjoy!

Whole Grain Blueberry Muffins

Ingredients
  • 2 1/4 Cups Baking Mix (Fiber One Pancake Mix)
  • 1 heaping cup frozen blueberries (not thawed, can use fresh)
  • 1 Cup Skim milk
  • 1/3 Cup sugar*
  • 1 Egg
  • 2 Tablespoons applesauce
Instructions
  1. Spray a 12 cup muffin pan with cooking spray.
  2. In a small bowl, place blueberries. Pour 1/4 cup of baking mix over them and stir. Set aside.
  3. In large bowl, place all other ingredients and stir until well mixed, but still lumpy. *Note: If you prefer a sweeter muffin, use 1/2 cup sugar.
  4. Pour in contents of blueberry bowl and gently stir. Spoon into muffin cups.
  5. Bake at 400 degrees for 15-20 minutes, or until lightly browned on top.
  6. When done, carefully remove from muffin pan and allow to cool.
