Our journey began October 2005 when we met in our Single's class at Prestonwood Baptist Church. We were engaged in June 2006 and were married on November 17, 2006. JP works for ROMCO as a Product Support Sales Manager and I will begin teaching part-time for the Dallas International School in August 2011. We have one little boy, Merit Cross. God has truly blessed our family.

Sweet Potato Butter, Yum!

I cut this recipe in half because I wasn't sure how it would turn out. It turned out great! And, my house smelled delicious all day!

2 cups sweet potatoes, cooked and mashed
3/4 cup honey
1/2 tablespoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
2 tablespoons lemon juice
A little water depending on how thick or thin you like you're butter. I added close to 1/2 cup for mine.

Combine all ingredients in saucepan. Cook over low heat for 25 minutes or more, stirring, until mixture is thick and smooth. Pour into two sterilized jars. Cover and store in refrigerator.Makes about 2 3/4 cups.Recipe courtesy of North Carolina Sweetpotato Commission.
